    Pan-Fried Tiger Prawns with Rocket and Mango Chutney

    Serves: 2

    Ingredients

    • 1 small mango
    • 2 shallots
    • ¼ tsp turmeric
    • 12 uncooked tiger prawns
    • 2 packets fresh rocket

    Method

    1. Add a peeled and diced small mango and 2 peeled and diced shallots to a pan with a drop of vinegar, sugar to taste and ¼tsp turmeric.
    2. Cook over a high heat for 5 minutes, stirring until almost all the liquid has evaporated. Heat an oiled frying pan, toss in 12 uncooked tiger prawn tails and stir-fry for 2-3 minutes or until they turn pink and are thoroughly cooked.
    3. Add 2 packs fresh rocket and stir-fry briskly until beginning to wilt. Serve immediately with the mango chutney.
