    Pan-Grilled Chicken Breast

    A chicken breast weighing 150-200g is plenty for one person. Separate the fillet from the underside of the breast and cook separately (try it thinly sliced in stir-fries). The chicken breast cooks more evenly without the fillet.

    • Preparation time: 5 minutes
    • Cooking time: 15 minutes to 20 minutes
    • Total time: 25 minutes 25 minutes

    Ingredients

    • 1 chicken breast per person
    • Olive oil or clarified butter
    • Salt and freshly ground black pepper

    Method

    1. Preheat an iron griddle pan over a medium-high heat. Brush each breast with oil or butter, and season well.
    2. Place the chicken on the hot pan and cook for 3-4 minutes until golden, then change the position and cook for a further 3-4 minutes, so you get criss-cross markings. Repeat on the other side - the chicken should take 15-20 minutes in total to cook. If the breasts are large, you can transfer the pan to a preheated oven (180°C/gas 4) for 8-15 minutes to finish cooking.
