    Pancake with vanilla ice cream with marmalade and whisky sauce

    Serves: 4

    Ingredients

    • vanilla ice cream to serve
    • dash of whisky or rum or Cointreau
    • 2 tbsp golden syrup
    • juice of 1 lemon
    • juice of 1 orange
    • 175g thin-cut marmalade

    Method

    1. Put 175g thin-cut marmalade, the juice of 1 orange, the juice of 1 lemon and 2 tbsp golden syrup in a small pan. Gently heat, stirring to help the marmalade dissolve. Bring to the boil, then take off the heat and leave to cool slightly. It is ready to serve when it is still warm but not mouth-burningly hot. Add a dash of whisky (rum or Cointreau would work, too). Put scoops of vanilla ice cream on the pancakes and pour over the sauce.
