    Pancakes with brown sugar-roast plums


    • warm pancakes to serve with greek yogurt
    • unsalted butter
    • dark brown soft sugar with any spice you like
    • Juice of 1 orange
    • 8 plums


    1. Preheat the oven to 180C, gas mark 4. Put 8 plums, halved and stoned, into a shallow baking dish and squeeze in the juice of 1 orange. Sprinkle with dark brown soft sugar and add any spice you like – try powdered cinnamon or crushed cardamom seeds. Top with some unsalted butter and bake until the plums are tender throuhout but not falling apart. Serve on warm pancakes with Greek yogurt and dark brown soft sugar or a drizzle of honey. Scatter chopped pistachios over the top.
