    Pancakes with buttered pears, vanilla ice cream and chocolate sauce

    Serves: 4

    Ingredients

    • Sprinkling toasted hazelnuts
    • vanilla ice cream to serve
    • golden syrup to sweeten
    • 1 tbsp double cream
    • 80g plain chocolate
    • butter for frying
    • 2 slightly under ripe peeled pears

    Method

    1. Gently fry 2 peeled, slightly under-ripe pears in a pan with some butter over a medium heat for 20 minutes until just tender. Melt 80g plain chocolate with 1 tbsp double cream, a knob of butter and just enough golden syrup to sweeten, stirring until smooth and shiny. Quarter and core each pear and serve on warm pancakes with vanilla ice cream and the warm sauce. A sprinkling of toasted hazelnuts is good, too.
