    Pancakes with Caramel oranges and pomegranates

    Serves: 4

    Ingredients

    • vanilla icecream or sweetened Greek yogurt to serve
    • pomegranate seeds
    • 110g sugar
    • 2 oranges

    Method

    1. Peel 2 oranges and slice neatly. Put 110g sugar and 60ml water into a pan and slowly heat until the sugar has dissolved. Turn the heat up and boil until the liquid turns to caramel. Take off the heat and pour in another 60ml cold water immediately: stand back, as the mixture will spit. Leave to cool, then pour over the oranges; chill. Serve on pancakes with a scattering of pomegranate seeds and either vanilla ice cream or sweetened Greek yogurt.
