    Pancetta, Egg and Tomato Salsa Rolls

    Serves: 2

    Ingredients

    • 2 medium eggs
    • 70g waitrose pancetta
    • 2 halved rolls
    • 1 tbsp waitrose fresh tomato salsa dip

    Method

    1. Place 2 eggs in a pan of boiling water and simmer for 6-8 minutes. Meanwhile, under a preheated grill, cook a 70g pack Waitrose Pancetta for 1-2 minutes on each side, or until crispy. Run cold water over the eggs briefly, then peel them.
    2. Cut 2 rolls in half, spread each with 1 tbsp Waitrose Fresh Tomato Salsa Dip, then add the pancetta and top with carefully sliced egg.
