    Paneer Tikka

    • Vegetarian
    • Preparation time: 20 minutes, plus 3-4 hours marinating
    • Cooking time: 25 minutes

    Makes: 8 kebabs

    Ingredients

    • 3 x 227g packs paneer
    • ½ tsp chilli powder
    • Salt
    • 1 large onion, chopped into large chunks
    • 2 green peppers, chopped into large chunks
    • 2 red peppers chopped into large chunks Marinade
    • Marinade:
    • ½ tsp ginger purée
    • ½ tsp garlic purée
    • Squeeze of lemon juice
    • 1 tbsp vegetable oil
    • 100g natural yogurt, whisked
    • 50ml double cream
    • 1 tsp ground cumin
    • Pinch of saffron strands

    Method

    1. Cut the paneer into cubes. Sprinkle with the chilli powder and salt and set aside. Mix the marinade ingredients. Add the paneer, onion and peppers, stir and set aside to marinate for 3-4 hours.
    2. Preheat the oven to 180˚C/gas mark 4. Skewer the paneer, onion and pepper on steel or wooden skewers (if using wooden skewers, pre-soak them for 30 minutes in cold water). Place on a baking tray to collect any drippings and bake for 25 minutes, turning twice. Remove the skewers and serve immediately.
