    Paper-Baked Butterfly Prawns

    • Preparation time: 5 minutes
    • Cooking time: 10 minutes to 12 minutes
    • Total time: 15 minutes to 17 minutes 20 minutes

    Serves: 4


    • 300g raw, shell-on tiger prawns
    • 1 lime, juiced
    • 1 tbsp chopped coriander
    • Pinch of sea salt


    1. Preheat the oven to 220°C/gas mark 7. Prise the head and shell off each prawn, but leave the tail on.
    2. Using a sharp knife, slit the curved side of the prawns, opening them out - but leaving the spines intact. If there are thin black veins running down the backs, remove them.
    3. Put the prawns on a large sheet of baking parchment. Sprinkle over the lime juice, coriander and salt. Wrap the paper round the prawns, twisting up the ends like a cracker.
    4. Put the parcel on a baking sheet and put in the oven for 10-12 minutes. Serve immediately.
