Paprika chicken with chunky salsa

800g pack essential Waitrose British Chicken Thighs, scored with a knife
1 tsp sweet smoked paprika
2 tbsp olive oil
4 essential Waitrose Tomatoes, diced
1 bunch essential Waitrose Salad Onions, sliced
195g can essential Waitrose Sweetcorn, drained
28g pack fresh coriander, chopped
1 tbsp essential Waitrose White Wine Vinegar
1. Preheat the oven to 200˚C, gas mark 6. Place the chicken in a roasting tin, toss in the paprika, 1 tbsp of the oil and seasoning. Roast for 25–30 minutes until the chicken is cooked through with no pink meat.
2. Meanwhile, mix the tomatoes, salad onions, sweetcorn, coriander, remaining oil, vinegar and seasoning together. Serve with the chicken and leftover juices.
