    Parma ham, papaya & feta salad

    Serves: 2

    Ingredients

    ½ x 90g pack wild rocket
    1 ripe papaya
    83g pack Parma ham
    75g Greek feta
    Juice 1 lime
    2 tbsp extra virgin olive oil
     

    Method

    1. Arrange the rocket on a serving platter. Peel and deseed the papaya and cut into 7 wedges.

    2. Wrap a slice of Parma ham around each one and place on top of the rocket. Crumble over the feta.

    3. Whisk the lime juice and oil together then season to taste and drizzle over the salad.
