    Parsley Ham Tart

    Serves: 6

    Ingredients

    • 450g shortcrust pastry
    • 350g diced onions
    • 2tbsp olive oil
    • 115g lean diced ham
    • A handful of finely chopped parsley
    • Tarragon
    • Thyme
    • Chervil
    • 1 egg
    • 200ml double cream
    • 3tbsp grated gruyere
    • Salt and pepper

    Method

    1. Roll out 450g shortcrust pastry and line a 23cm tart dish. Prick the base and chill for 30 mins.
    2. Preheat the oven to 220°C/gas 7 and bake blind for 20 mins.
    3. Sauté 350g diced onions in 2 tbsp olive oil, until soft, then mix in 115g lean diced ham and a handful of finely chopped parsley mixed with some tarragon, thyme and chervil. Add 1 egg beaten with 1 egg yolk, 200ml double cream, 3 tbsp grated gruyere, salt and pepper.
    4. Pour into the tart case and bake for 25 minutes until golden and slightly risen.
