    Parsnips and Carrots with Soy, Honey and Orange

    Try a this twist on Christmas root vegetables

    • Preparation time: 10 minutes
    • Cooking time: 30 minutes to 35 minutes
    • Total time: 40 minutes to 45 minutes 45 minutes

    Serves: 6

    Ingredients

    • 500g medium carrots
    • 500g medium parsnips
    • 3 tbsp olive oil
    • 3 tbsp clear honey
    • 1 tbsp dark soy sauce
    • Sea salt
    • Finely grated zest 1 medium orange
    • 2 tbsp chopped flat leaf parsley

    Method

    1. Peel carrots and parsnips. Cut in half lengthways.
    2. Put into a roasting tin and toss with the oil and salt. Roast in the oven at 190°C, gas mark 5 for 25-30 minutes until golden.
    3. Add the honey, soy sauce and orange zest. Toss to coat and return to the oven for a further 10 minutes until caramelised.
    4. Put into a serving dish and pour over any pan juices. Sprinkle with chopped parsley.
