    Patatas Bravas 2

    Patatas bravas is a tapas dish, a savoury snack that is popular in bars across Spain. Traditionally it consists of potatoes cooked in a spicy tomato sauce. Enjoy this Perfectly Balanced version as a simple supper dish that is quick to prepare.

    Serves: 4

    Ingredients

    • 1kg Nicola new potatoes, washed and halved if large
    • 2 x 110g packs Revilla Chorizo Sausage, thickly sliced
    • 2 red peppers, deseeded and thickly sliced
    • 2 small red onions, cut into wedges
    • 2 x 395g cans Waitrose Italian Cherry Tomatoes
    • 1/2 tsp Bart Spices Dried Crushed Chillies
    • 2 cloves garlic, thinly sliced
    • 2 tbsp chopped fresh parsley
    • Salt and freshly ground black pepper

    Method

    1. Preheat the oven to 200°C, gas mark 6. Place the potatoes, chorizo, peppers, red onions and seasoning in large roasting tin. Roast for 30 minutes, stir occasionally so the paprika-flavoured oils from the chorizo coat the vegetables.
    2. Add the tomatoes, chillies and garlic and cook for a further 20-30 minutes until the potatoes are tender. Add the parsley and stir through. Serve straight from the roasting tin. Serve with a large green salad.

    Variation

    For a vegetarian version, omit the chorizo and toss the vegetables with 1-2 tbsp olive oil and 1 tsp ground paprika before roasting.
