    Peach, lime and earl grey granita

    Earl grey teabags add an unusual twist to this frozen dessert

    Serves: 4


    • 60g golden caster sugar
    • 2 limes, finely grated zest and juice
    • 2 earl grey tea bags
    • 350g essential Waitrose home ripening peaches, stoned and quartered (about 4 peaches)


    1. In a saucepan, dissolve the sugar with 450ml water over a low heat. Remove from the heat and add the lime zest and tea bags. Infuse for 5 minutes – the tea wants to be strong, but not so much that it becomes bitter. Remove the tea bags and leave the infusion to cool to room temperature.
    2. Whiz the peaches in a blender or food processor with the syrupy infusion and the lime juice, until smooth. Pour into a shallow dish and freeze for 1 hour.
    3. Scrape the frozen edges of the peach mixture with a fork, then return to the freezer for another hour. Repeat the process once more; leave in the freezer until the granita is completely frozen into ice crystals. Fork through it a final time before serving.

    Cook's tips

    For a more substantial pudding, steep peach wedges and quartered strawberries in a little Campari and serve alongside this granita.
