    Peach Melba

    • Preparation time: 10 minutes
    • Cooking time: 10 minutes
    • Total time: 20 minutes 20 minutes

    Serves: 4

    Ingredients

    • A few fresh raspberries.
    • Drizzle of raspberry coulis
    • Scoop of Waitrose Organic Vanilla Ice Cream
    • 4 peaches
    • 50g caster sugar

    Method

    1. In a large pan bring cold water and caster sugar to the boil, stirring to dissolve the sugar.
    2. Add 4 peaches, halved and stoned, in 1 layer. Cover and cook for 4 minutes, turn, cover and cook for a further 3 minutes. Leave to cool in the syrup.
    3. Put 2 peach halves, with a little juice in each of 4 bowls, top with a scoop of Waitrose Organic Vanilla Ice Cream, a drizzle of raspberry coulis and a few fresh raspberries.
