Peaches & amaretto

2 ripe peaches, halved and stoned
2 tbsp clear honey
2 tbsp amaretto liqueur, plus extra to drizzle
2 tbsp mascarpone, to serve
20g small amaretti biscuits, roughly crushed, to serve
1. Place a frying pan over a medium heat and add the butter and 1 tbsp water. When it is foaming, add the peach halves, cut-side down, and drizzle over the honey. Cook for 3-4 minutes, before turning. Pour over the amaretto, turn the heat down slightly and cook for a further 4-5 minutes, until tender.
2. Transfer to two serving plates or bowls. Serve with the mascarpone, the amaretti biscuits scattered over and any juices from the pan. You could finish with an extra drop of amaretto, if you like.
