    Peaches with Summer Fruit Coulis and Mascarpone

    Serves: 4

    Ingredients

    • 4 ripe peaches
    • 500g mixed summer berries
    • 3 tbsp crème de cassis
    • A pinch of sugar
    • 4 tbsp marscapone

    Method

    1. Place 4 ripe peaches in a bowl and cover with boiling water. Leave for 10-20 seconds depending on how ripe they are and then peel off the skins. Halve and stone the peaches and place hollow side up on a serving dish.
    2. Place 500g mixed summer berries and 3tbsp crème de cassis in a food processor and pulse to a purée. Sieve to remove any pips and add a touch of sugar if necessary. Place a tablespoon of mascarpone in each peach hollow and drizzle the fruit coulis on top.
