    Pear, Rocket and Feta Salad

    Serves: 6


    • 4 tbsp fresh lemon juice
    • 5 tbsp extra virgin olive oil
    • 130g bag Waitrose Rocket Salad
    • 2 ripe pears
    • 175g Greek feta, drained and washed
    • ½ x 20g pack fresh mint, leaves only


    1. Put the lemon juice into a small bowl and season. Add 1 tbsp cold water and whisk in the olive oil. Taste for flavour, then adjust seasoning if necessary.
    2. Mix a third of the dressing with the rocket and arrange in the centre of a large platter.
    3. Holding the pears by the stem, thinly slice vertically from top to bottom, discarding the central slice with its seeds and core. Arrange on the platter around the rocket and drizzle with another third of the dressing.
    4. Finally, cut the feta into thin slices and arrange with the pears. Sprinkle the mint leaves over the salad. Drizzle with the remaining dressing and serve.
