    Penne with broccoli and ricotta

    Ingredients

    • 100g ricotta
    • ¼ chilli flakes
    • 1 garlic clove
    • 1 tbsp essential Waitrose olive oil
    • 1 essential Waitrose broccoli
    • 375g essential Waitrose fresh penne

    Method

    1. Tip 375g essential Waitrose fresh penne into boiling water. When it returns to the boil, add 1 essential Waitrose broccoli (about 375g), chopped into small florets, and cook until the pasta is al dente.
    2. Meanwhile, mix 1 tbsp essential Waitrose olive oil, 1 garlic clove, crushed, ¼ tsp chilli flakes and 100g ricotta in a bowl.
    3. Drain the pasta and broccoli, reserving 2 tbsp of the cooking liquid. Return to the pan over a low heat, then add the ricotta mixture and the cooking liquid, stirring until well combined. Season and serve.
