    Penne with peas, pancetta and ricotta

    • 400g essential Waitrose penne or other small pasta
    • 1 tbsp olive oil
    • 100g essential Waitrose smoked streaky bacon
    • 100g ricotta
    • 160g essential Waitrose frozen garden peas
    • 40g parmigiano reggiano, grated, plus extra for serving


    1. Bring a large pan of salted water to the boil and cook the pasta according to the instructions on the packet.
    2. While the pasta cooks, warm the olive oil on a medium-high heat and cook the bacon until it is lightly golden
    3. In a small pan of boiling water or in the microwave, cook the peas until just tender and drain
    4. When the pasta is al dente, drain it and toss it into the pan with the bacon. Stir in the peas and cheeses. Season well with plenty of black pepper and serve immediately, passing some parmigiano reggiano and the grater around the table.

    Always took pasta in plenty of boiling, salted water - it's best to allow at least 1 litre per 100g of dried pasta.
