    Penne with Sweet Onions and Goat's Cheese

    Gently cooked onions add a lovely roundness to this vegetarian pasta dish, contrasting with the lemony acidity of the goat's cheese.

    Serves: 4


    • 600g Onions, sliced
    • 3 tbsp Olive oil
    • 400g Penne
    • 200g Goat’s cheese, sliced
    • 4 tbsp Roughly chopped flat-leaf parsley
    • 2 tbsp Small black olives, unpitted
    • ½ tsp Dried red chilli flakes
    • Extra virgin olive oil, for drizzling


    1. Put the onions in a pan with the olive oil and 100ml water. Season and simmer, covered, for 15 minutes. Uncover and cook for 10 minutes until the onion is soft and still juicy.
    2. Meanwhile, cook the pasta in salted water, then drain, reserving half a cup of the cooking water. Heat the grill. Arrange the sliced goat’s cheese on foil and grill for 3 minutes until melting.
    3. Mix the pasta with the onions, parsley and olives, tossing lightly, adding some pasta water for extra moisture. Place the goat’s cheese on top, scatter with pepper and the chilli flakes, drizzle with olive oil and serve.
