Penne with Tuna and Potato

Ingredients

500g penne or rigatoni

4 medium potatoes

1 x 400g can tuna in olive oil

1 tbsp olive oil

20 small black olives
-
1 small red chilli, finely sliced

2 tbsp salted capers, rinsed

100g rocket leaves
-
Sea salt and freshly ground black pepper
Method

Bring a large pot of water to the boil, add salt, and cook the pasta. Meanwhile, peel the potatoes and chop into 1cm cubes. 5 minutes before the pasta is done, add the potatoes to the pan to cook.

Drain the tuna but reserve the oil.

Heat the 1 tbsp olive oil (not that from the tuna) in a pan, and add the tuna, olives, chilli and capers. Toss well until everything is hot.

When the pasta and potatoes are cooked, remove from the heat. Add the rocket and stir briefly to just wilt the leaves. Then drain and add to the tuna mixture, along with most of the reserved tuna oil. Add pepper (and salt if necessary), toss well, then serve.
