    Pepper and Cumin Dressing

    Ingredients

    • A little clear honey
    • 1 tbsp chopped fresh parsley
    • ½ tbsp balsamic vinegar
    • 4 tbsp extra virgin olive oil
    • ½ teaspoon ground cumin
    • 2 tbsp olive oil
    • 1 clove of garlic
    • 1 red pepper

    Method

    1. Gently cook 1 red pepper, finely diced, and 1 garlic clove, finely chopped, in 2 tbsp olive oil until softened but not browned.
    2. Then add ½ tsp ground cumin, roasted, and cook for another 30 seconds. Remove from the heat, then whisk in 4 tbsp extra virgin olive oil, ½ tbsp balsamic vinegar, 1 tbsp chopped fresh parsley and a little clear honey. Season and add more vinegar to taste.

    Cook's tips

    Cook's tip Make the dressing the day before and store, covered, in the fridge. Remove from the fridge an hour before serving to bring it to room temperature.
