    Peppers with Anchovies and Olives

    Serves: 4

    Ingredients

    • 225g roasted peppers
    • 55g marinated anchovy fillets
    • A few black olives
    • 1 garlic clove
    • Olive oil
    • Lemon juice

    Method

    1. Slice 225g roasted peppers into strips and arrange on a serving plate. Take 55g of marinated anchovy fillets, drain and halve lengthways.
    2. Arrange over the peppers. Scatter a few black olives and a garlic clove, thinly sliced, over the top. Add the dressing from the roasted peppers, a little olive oil and lemon juice, if desired.
