    Pesto and Pepper Pork

    • Preparation time: 10 minutes
    • Cooking time: 20 minutes
    • Total time: 30 minutes 30 minutes

    Serves: 2


    • 1 tbsp essential Waitrose Olive Oil
    • 2 essential Waitrose British Pork Loin Steaks
    • 1 pack mixed Romano peppers, deseeded and sliced lengthways
    • 2 essential Waitrose Tomatoes, roughly chopped
    • 150ml dry white wine
    • 2 tbsp Waitrose Green Basil Pesto (from the chiller)


    1. Heat the oil and brown the chops on both sides. Add the sliced peppers and cook for 5 minutes until the vegetables are soft and browned. Add the tomatoes and cook for another couple of minutes.
    2. Add the wine and some seasoning, then bring to the boil. Cover the pan and simmer for 10 minutes, until the chops are cooked through. Remove the chops to warmed serving plates.
    3. Stir the pesto into the peppers and spoon over the chops. Serve with mashed potatoes and a watercress and rocket salad.
