    Pesto coley, beans & roasties

    Serves: 4

    Ingredients

    500g frozen essential Waitrose Roast Potatoes
    4 frozen essential Waitrose Coley Portions, defrosted
    2 tbsp Waitrose Green Basil Pesto
    50g fresh breadcrumbs
    400g can essential
    Waitrose Baked Beans

    Method

    1. Preheat the oven to 220ºC, gas mark 7.

    2. Place the potatoes on a roasting tray and bake for 30–35 minutes.

    3. Meanwhile, drain the fish on kitchen paper and spread both sides with pesto. Roll in seasoned breadcrumbs and place on a greased baking tray. Place in the oven for the last 20 minutes.

    4. A few minutes before the potatoes and fish are ready, heat the beans and serve on warm plates.
