    Petit Almond Sandwiches

    • 50g dark chocolate
    • 650ml vanilla ice cream
    • 2 almond thin biscuits


    1. Finely grate 50g dark chocolate into a large dish.
    2. Cut a 650ml vanilla ice cream brick into 2cm slices, and sandwich each between 2 almond thin biscuits. (Make sure the ice cream is frozen solid before preparing, or this will be messy.) Dip each side of the ice cream into the grated chocolate. Wrap each individual sandwich in clingfilm, covering several times to protect against freezer burn. Store in the freezer until ready to eat.
