    Pizza Fillets

    This tasty fish dish can be on the table in half an hour. Serve with a green salad.

    • Cooking time: 20 minutes to 25 minutes
    • Total time: 25 minutes to 30 minutes 30 minutes

    Serves: 4


    • 227g can Waitrose Chopped Italian Tomatoes
    • Pinch of Bart Spices Crushed Chillies
    • 1 pack fresh basil or thyme, roughly chopped
    • 4 white fish fillets, such as fresh Icelandic haddock or cod
    • 150g cheese, such as Cheddar, Jarlsberg or mozzarella, coarsely grated
    • 1 Peperami sausage, thinly sliced
    • 2 tbsp Waitrose Select Spanish Capers
    • 25g Parmigiano-Reggiano, freshly grated


    1. Place the tomatoes in a small pan with the chilli and herbs. Cook gently for 10-12 minutes until most of the liquid has evaporated and the tomatoes are pulpy.
    2. Preheat the grill to high. Pat the fish fillets dry with kitchen paper and place them in a grill pan lined with lightly greased foil. Spread the tomato mixture over the fillets, then top with the cheese, Peperami slices, capers and the Parmigiano-Reggiano. Grill for 9-10 minutes until the cheese is bubbling and golden.

    Serve with a tangy salad made up of Romaine lettuce, 1 ripe avocado pear and a 100g pack Waitrose Sea Salt and Herb Croutons (find them in the chiller cabinet, near the fresh soups), tossed with 3-4 tablespoons green pesto.
