    Plum and Marzipan Pastries

    Though these chic little pastries look like they've been bought from a high-class patisserie, they are in fact easy as anything to make. Cold single cream or crème fraîche is all that's needed to adorn them, and maybe a fine-lipped cup of Lady Grey.

    • 500g puff pastry, thawed if frozen
    • 175g golden marzipan
    • 2 tbsp crème fraîche or double cream
    • 2 tsp orange blossom water
    • 8 plums, halved and stoned, then cut in half horizontally to form thick, round wedges
    • 25g shelled pistachios, blanched and roughly chopped


    1. Preheat the oven to 200°C, gas mark 6. Roll out the pastry on a lightly floured board until it is the thickness of a pound coin, measuring approximately 30cm x 30cm. Cut into 6 rectangles and place on the baking sheet. Prick each pastry rectangle all over with a fork, leaving a 2cm border around the edge. Chill in the fridge.
    2. Meanwhile, make the topping. Blend the marzipan, crème fraîche and orange blossom water in a food processor until smooth. Spoon a blob onto each pastry rectangle and spread it around, leaving a 2cm border. Distribute the plum slices between the pastries, placing them cut-side down, and scatter with pistachios. Bake for 20–25 minutes till golden and well risen.
