    Plum and Marzipan Tart

    A classic combination of textures and flavours in an easy-to-make tart.

    • Preparation time: 15 minutes
    • Cooking time: 15 minutes to 18 minutes
    • Total time: 30 minutes to 33 minutes 35 minutes

    Serves: 6 - 8

    Ingredients

    • 375g pack Saxby's Fresh Ready Rolled Puff Pastry
    • 1 egg yolk
    • 2 tbsp milk
    • 175g Waitrose Golden Marzipan
    • 400g plums, halved and stoned
    • 2 tbsp caster sugar

    Method

    1. Preheat the oven to 220°C, gas mark 7. Sprinkle a large non-stick baking sheet with a little cold water.
    2. Unroll the pastry and place on the baking sheet, trimming to fit. Using the tip of a sharp knife, score round the pastry to within 2cm of the edges. With a fork, prick the centre of the pastry all over. Mix together the egg yolk and milk, then brush the edge of the pastry.
    3. Coarsely grate the marzipan, then sprinkle over the pastry within the scored lines. Arrange the plums evenly over the top, cut side up (otherwise the pastry will go soggy). Sprinkle the plums with sugar and bake for 15-18 minutes, until the pastry edges are nicely browned and the plums are tender.
    4. Allow to cool for 5 minutes, then cut into 6-8 pieces and serve with crème fraîche ice cream.

    Cook's tips

    This tart also works well using thinly sliced apples or pears. If the plums are large, try thickly slicing them rather than halving.
