    Plum and Tomato Soup

    Serves: 6


    • 25g olive oil
    • 1 medium onion, finely chopped
    • 450g red plums, stoned
    • 2 red plums, peeled, stoned and diced
    • 450g tomatoes, peeled, cored and deseeded
    • 75ml tomato juice
    • 570ml chicken stock
    • 1 sprig of thyme
    • 1 teaspoon of caster sugar
    • 1 teaspoon of chives, snipped
    • 1 tablespoon of parsley, finely chopped
    • Salt
    • Pepper


    1. Heat the oil and gently sauté the onion till soft but not browned. Stir in the plums, tomatoes, tomato juice, stock, thyme, sugar, a generous pinch of salt and a few grinds of pepper.
    2. Bring to the boil, turn down the heat, and simmer gently for 15 minutes. Leave to cool slightly, fish out the thyme, and force through a sieve. Check the seasoning, and chill.
    3. Serve garnished with chopped raw plums, chives and parsley.
