    Poached Eggs on Toast with Flavoured Butter

    • Preparation time: 10 minutes
    • Cooking time: 7 minutes

    Serves: 2

    Ingredients

    • 100g Unsalted butter, softened
    • 1 tbsp Chilli jam or chilli sauce
    • 1 Garlic clove, crushed
    • 1 tbsp Lemon juice
    • 2–4 Very fresh eggs
    • 2 tbsp Finely chopped parsley
    • 4 slices Wholegrain bread

    Method

    1. Beat together the butter, chilli jam or sauce, garlic and lemon juice; set aside.
    2. Use 2–4 eggs, depending how hungry you are. Poach them gently in a wide, shallow pan of barely simmering water for 3–4 minutes, so the whites are set, but the yolks remain runny
    3. Melt 2 tbsp flavoured butter in a small pan. Add the parsley and allow to wilt for 20 seconds, before taking off the heat.
    4. Toast the bread and spread generously with the non-melted butter. Place a poached egg or two on the toast and spoon over a little of the melted flavoured butter with parsley.
