    Pomegranate Crush

    This is a common drink in Bengal, where pomegranates are abundant. It's really more of a spring drink as the fruit are in season between February and May; nevertheless, it's very refreshing during the English summer.

    Serves: 1


    • 1 pomegranate, well chilled
    • Pinch of salt
    • Sugar, to taste
    • Pinch of freshly ground cumin


    1. Remove the seeds from the pomegranate with a teaspoon. Discard the pith and put the seeds in a blender. Pulse just enough to break down the flesh and release the juice (about 10 seconds). Don't purée completely or the pulverised seeds will make it bitter.
    2. Push the purée through a sieve. Add salt, sugar and cumin to taste. Pour into a chilled glass (add ice if you like) and serve with a straw.
