Pork & mash with autumn fruit

1 tbsp olive oil
1 pork fillet, approx 450g
50g dried prunes, halved
50g dried apricots, halved
250ml chicken stock
2 tsp wholegrain mustard
1 ripe pear, cored and thickly sliced
450g pack Waitrose Swede, Carrot & Potato Mash
1. Heat the oil in a large frying pan. Cut the pork into 12 slices and fry for 5 minutes with the prunes and apricots, turning halfway through.
2. Pour in the stock, mustard and pear and cook for 5 minutes or until the pork is thoroughly cooked through.
3. Meanwhile, heat the mash according to the pack instructions and serve with the pork and autumn fruits.
