    Pork with tomato couscous crust

    • Preparation time: 10 minutes
    • Cooking time: 25 minutes
    • Total time: 35 minutes

    Serves: 4

    Ingredients

    100g Love Life Wholewheat Couscous
    2 tbsp sun-dried tomato paste
    25g pack parsley, chopped
    1 tbsp olive oil
    1 essential Waitrose British Pork Fillet
    600g frozen essential Waitrose Whole Green Beans
     

    Method

    1. Preheat the oven to 200°C, gas mark 6. Pour 200ml boiling water over the couscous and tomato paste, cover and leave for 5 minutes then fluff up with a fork and stir in the parsley.

    2. Meanwhile, heat the oil in a large frying pan and fry the pork until browned to seal. Transfer to a baking tray and coat with the couscous mixture, pressing firmly to form a crust. Bake for 25 minutes or until cooked throughout. Allow to rest for 5 minutes.

    3. Cook the beans according to the pack instructions and serve with the sliced pork.
