    Pork, Curried Parsnip and Butternut Squash Sausages with Roasted Squash

    • Preparation time: 10 minutes
    • Cooking time: 40 minutes
    • Total time: 50 minutes 50 minutes

    Serves: 4

    Ingredients

    • 8 Waitrose Pork, Curried Parsnip and Butternut Squash Sausages
    • 1 butternut squash
    • 1 pack Waitrose Legume Medley
    • 1 tbsp olive oil

    Method

    1. Place 8 Waitrose Pork, Curried Parsnip and Butternut Squash Sausages on a baking tray in a preheated oven, 220°C, gas mark 7, for 35-40 minutes, until the juices run clear and there is no pink meat.
    2. Meanwhile, peel and deseed a butternut squash and slice into wedges. Place on another baking tray, drizzle with 1 tbsp of olive oil and season well. Bake for 35-40 minutes, until tender. Serve sausages with the roasted squash and a pack of Waitrose Legume Medley, or other green vegetables.
