    Pork, Feta Cheese and Olive Sausages with Grilled Polenta

    Thin slices of golden polenta grilled with fresh feta cheese, a little olive oil and fresh herbs are good partners to these sausages.

    Serves: 3 - 4

    Ingredients

    • 1 x 375g pack Valsugana Instant Polenta
    • Salt
    • 115g feta cheese
    • 4tsp olive oil
    • 8 Waitrose Pork, Feta Cheese and Olive Sausages
    • 1tsp freshly chopped parsley, basil or tarragon

    Method

    1. Make up one-third of the polenta, following the instructions on the pack and adding some salt. Line a Swiss roll tin with baking parchment and spread out the polenta.
    2. Allow it to cool for 15 minutes and cut into 4 rectangles.
    3. Sprinkle the polenta with some crumbled feta cheese and drizzle a little olive oil on top. Place under a preheated grill with the sausages for 10-15 minutes, turning occasionally until thoroughly cooked.
    4. Sprinkle the herbs over the polenta, cut into triangles and serve with the sausages, accompanied by a salad of thinly sliced tomatoes, dressed with a little oil and torn basil leaves.
