    Pork, Spring Onion and Potato Sausages

    These are delicious served with traditional Irish champ.

    Serves: 4

    Ingredients

    • 1 leek
    • 150ml milk
    • 650g hot mashed potatoes
    • 115g butter
    • Pork sausages

    Method

    1. Trim and finely chop a leek and cook gently in 150ml milk, until soft. Stir into 650g hot mashed potato and season.
    2. Melt 115g butter, divide the potato into 4 and make a well in the centre of each portion. Pour in the butter and serve immediately.
