Pork stroganoff with mushrooms

Ingredients

500g pork fillet, trimmed

1½ tsp Bart Smoked Paprika

250g pack Waitrose Leckford Closed Cup Mushrooms, sliced

1 medium onion, finely sliced

200 ml half-fat crème fraîche
-
½ x 25g pack fresh curly parsley, chopped
Method

Cut the pork into thin strips, dust in paprika and seasoning. Set aside.

Heat a wide frying pan over a medium-high heat. When hot, add the mushrooms and cook, stirring, for 2 minutes. Remove and set aside. Add the onion and 2 tbsp water to the pan and cook, stirring, for 3 minutes, until softened slightly.

Add the pork to the onions. Cook for 2 minutes. Stir in the crème fraîche and simmer for 2 minutes, until the pork is just cooked. Add the mushrooms and their juices, the parsley and some seasoning. Divide between plates and serve with tagliatelle.
