    Pork with Hazelnut Crust

    Serves: 4


    • 15g butter
    • 25g fresh brown breadcrumbs
    • 25g ground hazelnuts
    • Rind of 1 orange
    • 3tbsp chopped fresh parsley
    • Salt and freshly ground black pepper
    • 1 x 100g pack Pant-Ysgawn Organic Welsh Goat's Cheese
    • 4 Waitrose Free Range Pork Loin Steaks


    1. Melt the butter, then fry the breadcrumbs for 2-3 minutes or until just crisp. Cool slightly. Mix in the hazelnuts, orange rind, parsley and seasoning. Spread the goat's cheese evenly over the pork steak, then lightly coat in the crumb mixture.
    2. Place on a baking tray in a preheated oven 200ºC, gas mark 6 for 40 minutes or until thoroughly cooked. Serve immediately with baked potatoes and Waitrose Leafy Green Salad.
