    Pork with Kumquats and Orange

    Jars of preserved fruits look very tempting and make excellent gifts. You can use our bottled fruits in any recipe.

    Serves: 2


    • 400g pork fillet
    • 1tbsp olive oil
    • 1 jar of preserved oranges and kumquats in brandy-flavoured syrup
    • 3 tbsp brandy-flavoured syrup, from jar
    • 1tsp balsamic vinegar
    • Baby new potatoes
    • Green beans


    1. Cut 400g pork fillet widthways into 1cm rounds. Pan-fry in 1tbsp olive oil for 8-10 minutes or until thoroughly cooked.
    2. Remove from the pan, season and keep warm. De-glaze the pan with 3tbsp of the brandy-flavoured syrup from the jar. Add 3tbsp Waitrose Cider and Sage Jelly and dissolve over a low heat. Stir in 1tsp balsamic vinegar. Add 4 orange slices and 8 kumquats from the jar and warm through in the glaze.
    3. Serve the pork and kumquats on top of the orange slices and drizzle the glaze over the top. Serve with baby new potatoes and green beans.
