    Posh Fish Fingers

    Ingredients

    • 250-275g Cod Fillet
    • 1 egg, beaten
    • 1 tbsp flour
    • 50g Waitrose Cooks’ Ingredients Lemon and Pepper Crust

    Method

    1. Preheat the oven to 200°C, gas mark 6. Take a 250-275g Cod Fillet, and cut into 6 pieces about 10 x 3cm. Take 3 shallow bowls and place one of the following into each: a beaten egg, 1 tbsp flour, 50g Waitrose Cooks’ Ingredients Lemon and Pepper Crust.
    2. Pat dry each piece of cod with a piece of kitchen paper, then quickly dip first into the egg, then the flour (until very lightly coated) and finally roll in the lemon and pepper crust. Place on a baking sheet. Repeat for each piece of cod. Bake for 15-20 minutes, or until the fish is just cooked. Serve with roasted vine tomatoes and mashed potatoes.
