    Pot Roast Chicken with Sweetcorn and Pumpkin

    For a tender, moist chicken with a great flavour, roast it in a covered casserole. Any of the Waitrose range of fresh British chickens can be used.

    • Cooking time: 100 minutes
    • Total time: 1 hour 50 minutes 60 minutes 50 minutes

    Serves: 4

    Ingredients

    • 1/2 x 200g pack Waitrose Danish Smoked Bacon Lardons
    • 2 tbsp olive oil
    • Waitrose Fresh British Free Range Chicken (approx 1.6kg)
    • 1 bulb garlic, cut in half horizontally
    • 1 lemon, halved
    • 300ml chicken stock
    • Salt and freshly ground black pepper
    • 3 cobs sweetcorn, each cut into 4 slices
    • 600g pumpkin, halved, deseeded, peeled and cut into large chunks
    • 3 tbsp low fat plain yogurt
    • 2 x 400g Waitrose Bistro White and Wild Rice

    Method

    1. Preheat the oven to 180°C, gas mark 4. On the hob heat a large flameproof casserole dish, add the bacon lardons and fry for 2-3 minutes or until well browned. Drain the lardons on kitchen paper and discard any fat from the dish.
    2. Heat the oil in the same dish, add the chicken and fry until browned on all sides - use 2 wooden spatulas to turn the chicken. Drain off any fat. Place the garlic and lemon in the chicken cavity. Return the chicken to the casserole dish, pour in the stock and season. Bring to the boil, cover and place in the oven for 30 minutes. Add the bacon lardons, sweetcorn and pumpkin, arranging them around the chicken, and return to the oven and cook for 1 hour, or until the chicken is thoroughly cooked so that the juices run clear and there is no pink meat.
    3. Lift the chicken out of the casserole dish and transfer onto a large serving dish with the vegetables. Discard the garlic and lemon.
    4. On the hob, boil the juices in the dish until reduced by about half. Check the seasoning, remove from the heat and whisk in the yogurt - do not reboil. Spoon the sauce over the chicken and serve immediately with the rice.
