    Potato Dumplings

    Serves: 4


    • 200g floury potatoes, boiled, dried and mashed
    • 60g potato flour, plus extra for dusting
    • 4 medium egg yolks
    • 1 sprig tarragon, finely chopped
    • salt
    • pepper


    1. Mix all the ingredients together (you may need more potato flour if the mix is too wet).
    2. Roll into small balls, dust with a small amount of potato flour, and poach gently in seasoned water with a teaspoon of butter in it, until they float to the top. Refresh immediately.
