    Potted Cheese with Spring Onion, Marjoram, Parsley

    • Preparation time: 10 minutes, plus overnight chilling
    • Total time: 10 minutes, plus overnight chilling

    Makes: 12 balls

    Ingredients

    • 250g curd cheese
    • 6 spring onions, white and green parts finely chopped
    • 1 tbsp heaped, chopped Fresh marjoram
    • 1 tsp salt
    • 1 tsp level crushed, Black pepper
    • Very finely chopped parsley, to finish

    Method

    1. Beat the cheese with the spring onions, marjoram, salt and pepper. Pack into a bowl, cover with clingfilm and leave overnight in the fridge to take the flavours - 2 or 3 days is even better. Roll into a single large or 12 small balls and coat with a bright green jacket of freshly chopped parsley.
    2. Serve with radishes, unsalted butter and water biscuits warmed in the oven.
