    Prawn and Watercress Jackets

    An easy meal for 2

    Serves: 2

    Ingredients

    • 2 large floury baking potatoes (300g)
    • 85g prepacked watercress
    • 100g small cooked, peeled prawns
    • 3 tbsp crème fraîche
    • Salt
    • Pepper
    • Paprika

    Method

    1. Take 2 large floury baking potatoes (300g) such as Maris Piper, Cara or King Edward. Scrub and prick them. Bake at 200°C, gas mark 6, for 1-1 1/4 hours, until tender.
    2. Meanwhile, roughly chop 85g of prepacked watercress, and mix with 100g small, cooked, peeled prawns (thawed if frozen), 3 tbsp crème fraîche, salt and pepper. Split the cooked potatoes and spoon over the filling. Dust with paprika and serve with extra watercress, tossed in a little vinaigrette.
