    Prawns with Spicy Tomato Mayonnaise

    This is a quick to prepare, impressive meal. If you are squeamish, buy headless tiger prawns. By keeping the shells on you'll keep the flavour in.

    • Preparation time: 5 minutes
    • Cooking time: 10 minutes
    • Total time: 15 minutes 15 minutes

    Serves: 2 (generously)


    • 2 tbsp olive oil
    • 12 raw tiger prawns in their shells, washed and dried
    • 1 garlic clove, crushed
    • ½ 250g pack Waitrose Easy Cook and Wild Boil in the Bag Rice
    • Squeeze of lemon juice
    • For the spicy mayonnaise:
    • 2 tbsp Pace Thick and Chunky Hot Salsa
    • 1 tomato, skinned, seeded and diced
    • 2 tbsp light mayonnaise


    1. Heat the oil in a large frying pan and fry the prawns and garlic for about 5 minutes over a high heat, turning occasionally. Reduce heat and cover with a lid for another 3-5 minutes, until prawns are pink and cooked through.
    2. Meanwhile, cook the rice according to the instructions on the pack.
    3. Mix the salsa, tomato and mayonnaise, and transfer to a small serving bowl.
    4. Finish the prawns by adding the lemon juice to the pan. Divide the rice between two plates and pile with prawns. Serve with wedges of lemon and a leafy green salad.
