    Prime Cod Fillet Parcels

    These individual parcels of prime cod in crisp puff pastry are quick to prepare and easy to serve. Serve with a simple rocket and crème fraîche sauce.

    Ingredients

    • 2tbsp fresh lemon thyme, finely chopped
    • Zest of 1 lemon
    • 4 Prime Skinless Cod Fillets, each weighing approx 250g, cut in half
    • 2tbsp olive oil
    • 1x 500g pack of Saxby's Fresh Puff Pastry
    • 1 medium egg, beaten
    • Salt and freshly ground pepper
    • For the sauce:
    • 200ml tub of Waitrose Half Fat Créme Fraîche
    • ½ a bag of Waitrose Fresh Rocket, finely chopped
    • Salt and freshly ground pepper

    Method

    1. Mix together the thyme, lemon zest and seasoning and coat each piece of cod on both sides.
    2. Heat the oil in a large frying pan and cook each cod fillet over a medium heat for 2 minutes on each side. Remove from the pan and leave to rest on kitchen paper for at least 10 minutes.
    3. Roll the pastry out to make 8 rectangles 2cm larger than each fillet.
    4. Lay out 4 pieces of the pastry and place a fillet on each one. Brush the pastry edges with water and place the remaining pieces of pastry on top. Seal the edges, brush with beaten egg and place on a baking tray in a preheated oven 200ºC, gas mark 6, for 15 - 20 minutes until golden brown.
    5. Warm the créme fraîche and rocket in a saucepan over a low heat and season.

    Cook's tips

    Make sure the cod is well drained after frying as excess moisture can make the pastry soggy. As a variation, wrap the fillets in prosciutto ham before placing them in the pastry.

    Serving tips

    To serve, cut each parcel in half diagonally, place in the centre of each plate, drizzle the sauce around the edge and garnish with rocket leaves.
