    Pumpkin, white bean and kale soup

    Use up Halloween pumpkin in this hearty broth.

    Serves: 4


    • 2 tbsp essential Waitrose olive oil
    • 1 large onion, coarsely chopped
    • 900g pumpkin or squash, peeled, deseeded, cut into small chunks
    • 1 garlic clove, crushed
    • 3 tbsp essential Waitrose tomato purée
    • 1 litre vegetable stock
    • 400g can cannellini beans,
    • 100g curly kale


    1. Heat a saucepan over a medium heat and add the oil. Add the onion and pumpkin or squash; season and cook for a few minutes until the vegetables have some colour. Add a splash of water, cover the pan and sweat the vegetables over a very low heat for 15 minutes.
    2. Add the garlic and cook for another couple of minutes, then add the tomato purée, stock and beans; season. Simmer for 5 minutes, then add the kale and cook for another 5 minutes. Check the seasoning before serving, perhaps with a drizzle of extra virgin olive oil and shavings of parmiggiano reggiano.
